I recently did a coffee tasting with Javier, and it was hands down one of the most engaging and educational experiences I’ve had. Instead of overwhelming us with technical jargon, he explained the roasting process in a way that made the chemistry of the bean feel approachable and fascinating. You actually understand what’s happening to the bean as heat transforms it how flavors develop, how tones emerge, and why each roast tastes the way it does. We tasted four different coffees, and it truly felt like a wine tasting but for coffee. Javier guided us through the different notes and tones in each cup, helping us slow down and really pay attention to what we were experiencing. It wasn’t just “light” or “dark” it was layered, nuanced, and intentional. What I appreciated most was the emphasis on taste and brewing rather than just cultivation. We didn’t just learn we participated. You get to roast the coffee yourself and brew it yourself, which makes the whole process personal and memorable. It gives you a new respect for every cup you drink afterward. Javier was incredibly friendly, engaging, and clearly passionate about what he does. Absolutely amazing experience and recommend it to all who come to Salento. Javier is so knowledgeable but presents it in a fun way - you really get to know the science behind coffee making but the practical side too with how you learn how to brew so many types of coffee after and how to roast and grind coffee. His English is excellent and he's so easy to talk to and it was great to chat with him over a beer at the end of the tour about Colombia.

Not your average coffee tour. This is an experience about the taste rather than a tour of fields. Javier is an amazing teacher who explains how to roast coffee (followed by our own roasting of beans), he explains the science and then the experience ends with the most amazing tasting of 4+ coffees with incredibly distinct flavours. Couldn’t recommend this highly enough for people who love drinking coffee and want to be more informed about the taste of their coffee. Coffee nerd approved!

Do not miss this experience! We had already visited a coffee farm elsewhere and just wanted to sink our teeth into brewing methods. This is exactly what we got on this tour, and more! Javier was super friendly, he has lived in the US and speaks fluent English - perfect for explaining the physics and chemistry behind the brewing process. It was hands on roasting, we got to see it happen in real time and test the process. Then we tried various pours and weighed out the ground coffee to water ratio etc. Javier chatted to us for a long time about Colombian life, which really helped us feel connected to Colombia. His business is small and has been running for a year, it offers so much more than you'll get at the big industrial tourist farms - we saw throngs of people heading towards them, but honestly, you'll get much more intimate insider knowledge here!
